Mug Cake

My celebration gingerbread mug cake.

This is a great simple, quick recipe to make if you’re looking for something sweet but don’t have much time (or energy) to make anything too big. It literally takes 5 minutes from start to finish, and you can add flavours to the basic mix for something different. My favourite is the chocolate mug cake (with added chocolate bits for something a little more decadent), but the gingerbread one is a close second.

Basic Mix

4 tablespoons SR flour

3 tablespoons milk

3 tablespoons veg oil

2 tablespoons sugar (can adjust down as this is quite sweet)

1 egg

Add:

  • 1 tablespoon cocoa for chocolate cake
  • chocolate bits for added decadence – dark, milk, white, whichever is your favourite.
  • 1 teaspoon each of ground ginger and mixed spice for gingerbread (less sugar – or swap to brown sugar – plus squirt of golden syrup also optional).

 

To Make

Mix dry ingredients together in a large mug. Add all wet ingredients and mix through. Bake in the microwave for 3 minutes.

Optional: Mix in a bowl and split between up to 4 ramekins or 2 smaller mugs. Makes a great quick dessert with ice cream, custard and cream.
